We are all busier than ever these days with work continually piling up on our desks, driving the kids to all their after school activities or life in general constantly coming at you from all directions. With crazy schedules and limited time, dinner seems to typically end up coming in a brown bag, or square box and other geometrically shaped containers. What if I told you, you could easily make one of your favorite take out dishes at home, on the cheap and in WAY less time than it would take for the delivery man to come. Don’t believe me!? Just keep on readin’!
Who loves sushi? It’s quick, easy, and you get to eat it with chopsticks so it’s entertaining. Especially if you suck at using chop sticks and it’s like a game to see how many tries it takes for you to get the food into your mouth.
One thing I love about ordering sushi is the appetizer that’s comes with it, MISO SOUP! It’s warm, brothy (is this a word?), salty and filling and shockingly super easy to make! With just a few ingredients and 15 mins, you can have a full pot of this stuff for you and the family that can be stretched for days.
Now I’m sure some of these things are not on your typical grocery list, but if you branch out juuuust a little bit, you’ll be amazed at what you can make. Here’s what you’ll need: (Ignore the Garlic in the picture above. I’m Eastern European, we tend to add garlic to everything, but I managed to skip it in this recipe. Sorry Mom…)
- Dashi Soup Stock Granules – This stuff smells a little funky but don’t let that deter you! It’s what we’ll use to make the broth of our soup. It’s actually a fish based broth so that’s probably where the fragrant scent comes from. Not sure where to buy? I know everyone has amazon Prime these days, so hop on that app and grab yourself some. The little bottle will last you a few rounds of soup.
- White Miso Paste – If you are like my boyfriend, you may be asking yourself “Miso is a thing?” and yes, it is. Another Amazon purchase for me! Or if you have an Asian market nearby most of these ingredients can be found there.
- Tofu (Extra Firm – it’ll be easier to cut) – Now I was raised as a meat and potatoes gal, so the fact that I bought tofu is kind of shocking, but to make miso soup it had to be done! This can be found in the refrigerated produce section of the market if you were wondering, because it took me a few loops to figure that one out.
- Nori (Dried Seaweed Sheets) – Can be found in the international aisle at the super market. It’s crunchy now, but will wilt in our soup.
- Green Onions – This one is easy!
- Water – Also easy…
Now here’s what you do and the exact amounts of the ingredients:
SERVINGS – 6 – 1 cup servings
- 6.5 cups water (I add a little extra, you know for taste testing)
- 4 teaspoons instant dashi stock granules – May need more depending on personal preference
- 1⁄2 cup white miso
- 1 sheet Nori (torn up to pieces)
- 1/3 of the tofu square, cut into cubes – Can add as much as you like really, but I found this to be plenty
- 2 green onion stalks, chopped
- Salt – Optional
- Bring water to a boil in a pot. Add the Dashi Granules and stir till dissolved. Let boil for a couple mins. I’d taste the broth now and see if you like the strength of the broth. You can always add more dashi ½ teaspoon at a time till you get the desired intensity. I ended up putting in 4.
- Next add in the miso and stir till dissolved. Taste again and salt if needed. I added just a bit and it made the flavors come alive.
- Once the miso is dissolved, throw in the nori, tofu and green onions. Turn down the heat and simmer for a couple of minutes.
And then, YOU EAT IT! That’s right kids, THAT’S IT! Easy right!? And it taste JUST like the stuff in the plastic container! What did that take!? 15 mins? 10? Once you narrow down how you like your miso soup, this recipe can be made in minutes! Now who doesn’t have time for that?
