Now my typical weeknight consists of coming home from work, heading to the gym, laying around with my sweet Lilly girl and heading to bed quickly after that. Not very thrilling I know, but on the weekends we tend to go out more and enjoy ourselves. Whether it’s just date night at home with friends or heading out to our favorite pizza spot, we try to do something that takes our minds off the hectic schedule we have Monday thru Friday.
When we are enjoying our downtime, a cocktail is usually always required. With summer coming and a wet bar going in to our new house, I thought I’d brush off my bartending skills and try out a drink recipe posted by one of my favorite bloggers, Eva, of Happily Eva After. I also have a bit of an obsession with rosemary. It’s probably my favorite herb to cook with. Its earthy flavor and aroma always make me feel at home, so when I saw this drink I couldn’t help but be intrigued. The simple syrup was quicker and simpler to make than I thought, which was nice. I hate overly complicated recipes. But if you can boil water, you can make this syrup. The grapefruit juice and rosemary go so well together that it’s actually inspiring me to try and use the combo in other savory recipes – so stay tuned on that! But let’s get back to the star here. This drink is super light and refreshing and the grapefruit gives it a great balance of sweet and tart. It would also be great addition to your next brunch or afternoon BBQ. This along side a big ole rack of ribs!? Umm yes please!
Now here’s what you do to make it yourself!
- 2-3 oz (Let’s be real, 3-4 oz…) of Vodka (Or Gin if you prefer)
- 1 tablespoon Rosemary Simple Syrup (Recipe Here) – This stuff is pretty potent so go easy the first time, then add to taste
- 3 oz Grapefruit Juice
- Club Soda
- Rosemary sprigs and Fresh grapefruit for garnish
Just combine the first three ingredients in a cocktail shaker over some ice. Pour into a highball or whatever glass you prefer (Hell, even a red solo cup works for me!) along with some ice. Top with club soda and garnish with fruit and fresh rosemary. Hope you like it as much as I do! Cheers!
